SKY DELIGHT AWARDS 2017 (International Culinary competition) for the first time will be held on April 26th in the frameworks of the International Forum SKYSERVICE 2017. The Awards is supported by The Russian National Culinary Association. The competition and the awarding ceremony will take place in Gostiny Dvor on April 26.

BUSINESS Cold appetizer or a salad + hot meal for business class

ECONOMY Cold appetizer or a salad + hot meal for economy class

The interval = 5 minutes:

Chefs start to compete with a delay of 5 minutes. Every chef can think through the recipe in advance and make some preparations for cooking.

EVALUATION CRITERIA

EVALUATION CRITERIA

50 points taste;

10 points hygiene, mise en place, efficient use of food products;

25 points proper cooking, professional skills, the level of difficulty of the meal;

15 points presentation, visual appeal, proportionality of servings and innovation, possibility to include a meal to the in-flight menu;

In accordance with the regulations all meals are given for tasting to the jury. Any delay will result in penalty points: ONE POINT FOR EACH MINUTE OF DELAY.

TIMING

25 APRIL

MORNING ARRIVAL TO THE CITY

16:00 – 18:00 THE VENUE VIEWING + Dinner + Draw Procedure

The chefs should arrive in the morning. From 4 p. m. till 6 p. m. there will be an inspection of the site, later – dinner on the boat.

26 APRIL

9:00 ARRIVAL, PREPARATIONS

12:00 – 14:00 1 SHIFT

Chefs’ competitions. A chef starts with a 5 minutes interval.

Culinary-parade: show of the cooked dishes (optional).

13:30 PRESENTATION OF THE 1ST SHIFT

Dishes presentations by the chefs for the jury (chef’s aim is to explain the tricks used during the preparations and ingredients used to prepare the dish. To prove the nessesity of including such a dish on board’s menu).

14:00 – 14:30 BREAK

14:30 – 16:30 2 SHIFT

Chefs’ competitions. A chef starts with a 5 minutes interval.

Culinary-parade: show of the cooked dishes (optional).

16:00 PRESENTATION OF THE 2ND SHIFT

16:30 – 17:30 JURY WORKS

17:30 – 18:00 AWARDING CEREMONY
